Granny’s New Potatoes

-New potatoes

-Green onions

-Fresh dill (can substitute with parsley or other herb)

-Bacon

-Low fat sour cream and/or plain yogurt

Steam lots of new potatoes. Cut in pieces if too big.

Chop green onions and fresh dill.

Fry bacon til crisp, pour off fat but do not clean pan. Crumble bacon.

Put hot potatoes in frying pan, add low fat sour cream (you can substitute some of the sour cream with plain yogurt). Turn off heat.

Add bacon, green onions and dill.

If not hot enough, put heat under pan on simmer and watch carefully. If it boils, it will probably curdle.
