Ginger Glazed Carrots

  • 3 pounds carrots sliced into coins
  • 2 tablespoons margarine
  • 2 tablespoons agave syrup (the syrup of the agave cactus - the same cactus used to make tequila!)  generally available at Whole Foods or at health food stores 
  • 4 teaspoons minced fresh ginger
  • 1/4 teaspoon salt
  • 1. Slice carrots and add to boiling water. Return to boiling; reduce heat. Cover and simmer about 10 to 12 minutes or until carrots are just tender. Drain carrots. Pat dry.
  • 2. To glaze carrots, in a heavy skillet combine margarine, agave syrup, ginger, and salt. Stir constantly over medium heat until margarine is melted. Carefully add carrots. Toss gently for 2 to 3 minutes or until carrots are thoroughly coated with glaze and heated through completely.
