Ginger Ale and Honey Glazed Ham

3-4 pound, bone-in Red Wattle ham
1 tablespoon kosher salt
1/2 teaspoon dried sage
1 teaspoon freshly ground black pepper
1 cup white wine
2 1/2 tablespoons dijon mustard
2 tablespoons molasses
1/4 teaspoon cayenne pepper
2 cups ginger ale
2 tablespoons honey

Preheat oven to 300 degrees. Place ham in cast iron skillet or oven safe dish. Score the ham. Combine salt, sage, and black pepper. Smear onto ham. In a saucepan, combine wine, mustard, molasses, and cayenne pepper. Bring to a boil, simmer 5 minutes. Add ginger ale. Pour over ham. Place ham in oven for 1 hour. Baste ham and continue cooking 1 more hour. Baste ham again and increase oven temperature to 325 degrees. Bake for 2 more hours, basting every 20-30 minutes.
Brush ham with the honey. Return to oven for 30 minutes, basting once more. Remove ham from oven and allow to rest 10-15 minutes. Slice and enjoy!
