Garden Harvest Slaw with Balsamic Herb Vinaigrette

3/4c beets, grated

3/4c carrots, grated

3/4c turnips, grated

3/4c kohlrabi, grated

3/4c kale, finely chopped

3/4c parsley, finely chopped

1 small red onion, grated

Toss all ingredients and serve with Italian Dressing or see the recipe for the Balsamic Herb Vinaigrette.

1/3c olive oil

1/3c balsamic vinegar

1tsp sea salt

1TBS fresh basil

1/8tsp pepper

2tsp fresh thyme

1 large garlic clove, pressed

Shake vigorously and enjoy on a variety of salads or use as dipping sauce for fresh cut veggies.
