Fiesta Beef Casserole

2 Tablespoons olive oil                                         1 cup frozen corn

1 Pound of grass finished beef                               ¾ cup of sour cream

1 Tablespoon chili powder                                      12 oz chunky salsa

2 cups crushed tortilla chips                                    2 cups Keswick shredded cheddar

Preheat oven to 350° F.

Coat a large, heated skillet with olive oil; add beef and chili powder.  Cook until meat browns.  Remove beef to a large bowl and add the salsa, corn, and sour cream.  Spread one half of meat mixture in bottom of a 2 quart casserole.  Top with tortilla chips followed by cheese.  Bake for 20 minutes.
