Eggplant Supreme

Makes 4 servings...

½ large eggplant

4TBS butter

16oz can tomatoes (we diced juicy slicers)

dash oregano

1 bay leaf

salt and pepper to taste

½ onion, sliced

½-1c grated cheese

½-1c bread crumbs

 

  1. Sauté eggplant in butter for about 5 minutes.
  2. In a saucepan, combine tomatoes, oregano, bay leaf, salt & pepper, simmer for 15 minutes.  Remove bay leaf.
  3. Layer eggplant and onion in a greased casserole dish.  Pour tomato sauce mixture over top of eggplant and onion.  Sprinkle with desired amount of cheese and bread crumbs.
  4. Bake at 375° for 35 minutes.
