Easy Fritta from "Curves Member Guide"

  • 1/2 pd lean ground beef
  • 1 tbsp butter
  • 2 c sliced mushrooms
  • 1 c chopped onion
  • 2 tsp worcestershire sauce
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp dried parsley
  • 2 c fresh spinach
  • 4 large eggs
  • 1/4 c skim milk
  • 1/2 c shredded parmesan cheese
Spray large skillet with cooking spray.  Add ground beef, butter, mushrooms and onions; cook over medium - high heat 6-8 mins or until onion is tender, breaking beef apart with a spoon.  Add worcestershire sauce and seasonings.  Cook until meat is no longer pink.
      Stir spinach into meat mixture.  Push mixture to one side of pan.  Reduce heat to medium.  Beat eggs with skim milk and pour in other side of pan; cook without stirring, 1-2 mins or until set on bottom.  Lift eggs to allow uncooked portion to flow underneath.  Repeat until softly set.  Gently stir into meat mixture and heat thru.  Stir in cheese.
