CUCUMBERS: Swedish Sandwich Pickles

  • 1 ½ cups water
  • ½ cup vinegar
  • 2 salad cucumbers, scored lengthwise with a fork
  • 2 ½ teaspoons salt
  • 7/8 cup sugar
  • ½ teaspoons pepper
  • 2 tablespoons or more fresh dill, or 1 ½ teaspoons dried dill

Slice cucumbers crosswise into rounds. Place in a colander, sprinkle with salt , and drain for ½  hour.  Meanwhile, mix dry ingredients and dissolve in vinegar/water solution. Pack pickles in a jar, pour liquid over and chill overnight. Drain cucumbers before serving.
