Crowder Peas

3 c. Crowder Peas, shelled and rinsed

6 sl. Bacon

4 c. Water

1/4 c. Onion, finely chopped

2 cloves Garlic, minced

Cajun Seasoning

Salt

Pepper

Shell and rinse Crowder peas.  Fry bacon, reserving drippings.  In a 3qt. pot, cook peas in salted water until about 1/2 tender, about 30 minutes.  While peas are cooking, saute onions and garlic in 4 Tb. bacon drippings.  Crumble cooked bacon.  Add onion, garlic, Cajun seasoning, and bacon to peas.  Cook for 15 minutes.  Taste, then add salt and pepper and/or Cajun seasoning to taste.  Cook additional 15-20 minutes.

Traditionally served over rice, with cornbread.  Sliced Okra can also be added during the first cooking period.  For thicker consistency, 1-2 pods may be added to the boiling peas.
