Corn Tomato Relish

4 C cooked sweet corn kernels

2 C diced ripe tomatoes (remove

seeds if desired)

1 C diced onion (red or white)

1 C diced zucchini (optional)

½ C cider vinegar

1T sugar

2 T spicy mustard

1 T celery seed (optional)

salt & pepper to taste

Mix veggies together in large bowl. In small saucepan bring to boil vinegar, sugar, mustard, celery seed. Pour vinegar mixture over veggies, cover, and refrigerate. Best if made day before serving - will last 4-5 days. This is a nice side dish to compliment any meat.
