Cool Rhubarb Salad

3 cup rhubarb

1 cup sugar

3 oz. box strawberry or raspberry Jell-O

2 cups Cool Whip or Dream Whip

                Cook rhubarb until tender, sweeten to taste. (About 1 cup sugar)  While boiling, add Jell-O package.  Dissolve Jell-O in hot rhubarb.  Add 1 cup cold water.  Chill until thickened. (Several hours)  Add Cool Whip.  Chill until firm.
