Citrus Salad

Peel at least one of each citrus fruit on hand; the more variety the better. Section the fruit and then cut the sections in half and put them into a bowl.

Rinse and pat dry the cilantro and parsley, take the leaves from the stems and chop lightly.  Toss it in with the fruit and let it all meld for 15 minutes before serving.  If you want it to have a little extra tang, toss in some lime or lemon juice.  Adjust the cilantro and parsley to taste, and if you want to, add some chopped spinach or lettuce as well.  A sprinkle of pan toasted sunflower seeds adds a nice crunch.  It’s beautiful, light and refreshing and makes a great side dish for lunch or dinner, plus it’s a delicious boost of vitamin C.
