Citrus Beet Salad


1 bunch beets (about 8pcs)

1/2 lemon juice

1 small can mandarin oranges

Extra Virgin Olive Oil

salt and pepper

mixed greens or arugula


1.Wash the beers thoroughly in cold water.  Trim the tops and roots.  Put in a pot with cold water and little salt.  Water must be at least 1inch above the beets.  Boil until fork or knife tender about half hour.

2.  Drain the water off the beets and cool off a little before handling.  Slowly peel off the skin in cold running water or use a knife.  Cut in quarters.

3.  Drain the mandarin organges and reserve the juice for the dressing.  Set aside.

4.  Make the dressing by comining the mandarin orange juice, lemon juice, and olive oil.  Whisk and add salt and pepper.

5.  Put the beets and mandarin oranges on top of salad greens or arugula.  Drizzle with the dressing.
