1 C coarsely chopped cilantro

¼ C onion

2 Cups chicken broth

1 hot pepper chopped

1 tsp salt

1 tsp cumin

2 Cups Rice—brown or white

2 T oil

2 Cups water

            In blender, process all but rice, oil, and water. Meanwhile, heat oil and add rice. Stir on high heat about 5 minutes, until rice browns a bit. Add mix from blender and extra water. Cook on low as you would your choice of rice—brown or white.
