Chard on a Cheese Toastie

  • 4 large chard leaves, chopped
  • 2 cloves garlic, minced
  • handful of pine nuts, toasted
  • ~1/4 C Parmesan, grated
  • olive oil
  • balsamic vinegar
  • salt & pepper
  • 2 eggs
  • 2 slices crusty French bread

Saute the garlic in a spalsh of oil until just browned. Add the chard and cook a few minute more, until chard is just tender. Toss with pine nuts and set aside.

Fry the eggs. Coat the bread with olive oil, sprinkle with Parmesan, and broil ~45 seconds, until bubbling. Pile the chard on top of the bread and drizzle with balsamic. Put egg on top. Eat warm. It’s sublime.
