Cavatappi with Broccoli Raab & Arugula

1 lb Cavatappi

1 Tbs olive oil

4-8 oz broccoli raab, cut into 1/2 inch pieces

1 garlic clove, minced

3-4 C arugula

1 C chopped walnuts or pecans

Salt to taste

1 C Parmesan Cheese + more for topping


1. Prepare pasta according to package instructions. Reserve 3 Tbs of pasta water to be added in fnal step.

2. While pasta is cooking heat a skillet with olive oil and add broccoli raab. Cook til slight browned, but still crisp tender about 1 minute. Add garlic and chopped nuts and cook until broccoli raab is crisp tender and nuts have been toasted. Toss in arugula until wilted.

3. Add noodles, parmesan cheese and resevred pasta water. Stir and heat until cheese is melted. Sevre immediately, topping with more parmesan if desired.
