Carrot Cookies

Yields 4-5 dozen

1 cup butter
¾ cup sugar
Beat together with electric mixer in a medium bowl
1 ½ cups raw carrot
1 egg (beaten)
½ teaspoon vanilla
Add and mix well
2 cups flour
2 teaspoons baking powder
½ teaspoon salt

Sift together into the bowl and stir together. Drop by teaspoons on
ungreased baking sheets. Bake in preheated oven at 375F for 10 minutes.
Optional frosting: Mix 1 cup powdered sugar and the grated rind of 1
orange with enough orange juice to obtain spreading consistency.
