Beet and Carrot Relish

Beet and Carrot Relish

 3 medium sized raw beets                     3-5 Tbls rasperrry vinaigrette

2 medium size raw carrots                     ¼ to ½  cups chopped walnuts

1-2 tsps toasted sesame seeds

optional: cran-raisins, raisins or frozen/fresh raspberries, or diced

apples (use whatever amount to suit your taste (1/4 to ½  cup or more)

 

Grate or shred (use food processor) the raw beets and raw carrots.

Add the raspberry vinaigrette, walnuts and sesame seeds.

Optional:  add your favorite above, or experiment with other dried

fruit or fresh berries.
