Pig Pig’s Chili Pops



2 T olive oil

1 ½ C minced onion

1 T minced garlic

1 lb lean ground beef

1 lb chorizo sausage, casings removed

1 C soft breadcrumbs

2 eggs

¼ C chopped parsley

1 T chopped fresh thyme



Preheat oven to 400 degrees F. Heat oil in a skillet over med. Heat. Add onion & garlic and sauté about 8 minutes, stirring occasionally. Set aside to cool.

2. In a large bowl, combine remaining ingredients. Add onion mixture and mix well. shape heaping tablespoons of mixture into balls and place on a large baking sheet. Cook in oven for 18-20 minutes, or until browned and cooked through.

3. Place meatballs in pot or crockpot with sauce and simmer on low until ready to serve.


Spiced up marinara or other sauce

I used jarred pasta sauce with chili seasonings:
¼ C chili powder

1 T cumin

½ t cayenne

 And any other spice you might like


Serve on toothpicks (for chili pops) or over rice, in a hoagie roll or over corn chips…
