Arugula and Zucchini Salad


1/2 pound arugula

1 small zucchini (or 1/2 medium size)



1 to 2 tbsp. honey

1 lemon, juiced

1/2 cup olive oil

salt and pepper (to taste)



2 to 4 tbsp chopped walnuts

1 to tbsp grated or shaved parmesan cheese


1.  Mix all the dressing ingredients in a bowl.  Whisk until well blended.  Set aside.

2.  Wash and dry the arugula leaves.  Put in a bowl.

3.  Wash and slide the zucchini in thin strips or julienned, skin and all.  Toss with the arugula.

4.  Drizzle the salad with the dressing and top with the garnish


Note:  Try it also with a Tomato Balsamic Vinaigrette Dressing.
