Apple Gingerbread Cobbler

4 cups peeled, chopped apples

1 tbl. Lemon juice                                        

1 egg                                               

¼ tsp. Salt                                       

½ cup buttermilk                              

¼ cup molasses

½ cup brown sugar

2 tbl. Salad oil

1 cup flour

¼ tsp. Cinnamon           

½ tsp. Baking soda

½ tsp. Baking powder

½ tsp. ginger

½ tsp. cinnamon

¼ cup sugar 

Combine apples, brown sugar, 1 cup water, lemon juice and cinnamon in saucepan. Cover and cook ‘til apples are tender.  Beat together sugar,egg,salt,buttermilk, molasses and oil.  Stir together dry ingredients and spices.  Add to egg mixture and beat ‘til smooth.  Combine 2 Tbl. Cornstarch and 1 Tbl. Water; stir into apple mixture.  Pour into 1 ½ quart casserole.  Pour gingerbread batter over top.  Bake 350 degrees F. for 30 min.
