Ann Champsaur’s French Green Bean Salad

Boil

  • green beans

in water for a few minutes.
Make dressing with a wire whisk in a large bowl, whisking in the following ingredients one at a time.

  • 1 Tablespoon Dijon mustard
  • 2 Tablespoons red wine vinegar
  • 3 Tablespoons olive oil or yogurt

Add beans to the dressing, along with

  • chopped tomato
  • yellow pepper
