Waldorf Salad

3 cups diced sweet apples (such as Gala)               

1 Tbsp. cornstarch

2 cups diced celery                             

½ cup chopped walnuts                         

1 can crushed pineapple (1 lb., 4 oz)   

1 tsp. lemon juice

¼ cup sugar                                         

3 Tbsp. plain yogurt

¼ cup water 

Drain juice from pineapple and add water, sugar and cornstarch.  Cook until clear, then cool, and add yogurt.  Pour over fruit and stir.  Keep refrigerated.
