Pumpkin Muffins

2 c unbleached all-purpose flour

2 tsp baking powder

1 TBs pumpkin pie spice

¼ tsp salt

2 eggs, slightly beaten

1 c cooked mashed pumpkin, or winter squash, well-drained

½ c packed dark brown sugar

4 TBs melted butter

½ c unsweetened applesauce

¼ c milk, room temperature

 

Preheat oven to 400. Heavily grease a 12 cup muffin pan. Sift flour, baking powder, pumpkin pie spices and salt into a large mixing bowl. In a separate bowl, beat eggs, pumpkin, sugar, butter, applesauce, and milk. Stir dry ingredients into the pumpkin mixture, just until combined. Do not over mix. Spoon batter into muffin cups and bake until muffins are golden, about 30 minutes. Makes 1 dozen.
