Fresh Salsa

So easy. So tasty.

3-4 large heirloom or hybrid tomatoes, diced
1 onion, diced
½ cup cilantro or parsley, coarsely chopped
Juice of 1 lime or lemon
Salt and pepper to Taste
1 jalapeno pepper, diced and seeded

1.) Mix all the veggies together in a bowl.

2.) Add the lime juice, salt and pepper.

3.) Adjust the flavoring. Optional ingredients such as a teaspoon of cumin, a dash of cider vinegar or a minced sweet pepper can be added now.

4.) If your salsa is more watery than you expected, strain it until it's right.  Serve salsa fresh or store in a closed container in the fridge for up to a week.
