Cabbage Au Gratin

Cabbage

Carrots

Onion

Butter

Grated Swiss or cheddar cheese

Cheese Sauce

Prepare 2 cups of cheese sauce. Recipe follows.

Sauté 3 cups of finely chopped cabbage with 1 small diced onion. Place half the cabbage in a buttered casserole dish and pour over it ¾ cup of the Cheese Sauce.

Briefly sauté’ 1 ½ cups of shredded or grated carrots. Sprinkle half the carrots over the casserole. Top with ¾ cup of the Cheese Sauce. Add the remaining cabbage and ½ cup of Cheese Sauce. Mix ½ cup of grated Swiss or cheddar cheese with the remaining carrots and sprinkle on top. Bake uncovered for 40 minutes at 350 degrees. Serve warm from the oven.

Cheese Sauce

4 Tablespoons butter

4 Tablespoons of flour

1 ½ cups of milk

1 ½ cups of grated Swiss or cheddar cheese

Dash of hot sauce

½ teaspoon Dijon-style mustard

Salt and pepper

In a saucepan, melt the butter and stir in the flour. Add the milk a little at a time, using a whisk stir well after each addition of milk to prevent lumps. Add the remaining ingredients, heat and stir until cheese is melted. Season to taste with salt and pepper. Serve over cooked vegetables. Makes 3 cups.
