Zucchini Cake


4 eggs

3 cups sugar

1 1/2 cup vegetable oil


3/4 cup applesauce and 3/4 cup mixture of coconut oil & butter

3 cups grated zucchini

3 cups all purpose flour

1/2 tsp salt

2 tsp bakind soda

2 tsp baking powder

1 cup chopped nuts

2 tsp vanilla

Mix together eggs, sugar and oil. Add zucchini. Stir. Add Dry ingredients. Stir well. Add nuts, vanill last. Mix. \

Pour into a greased and sugared tube or bundt pan.

Bake at 350 degrees for about 60 minutes.

Cool in pan for 10 minutes. Unmold and cool on wire rack.

Spicy variation: add 1 1/2 cups firmly packed brown sugar in place of the white sugar. Add 3 tsp cinnamon and increase vanilla to 3 tsp.
