ZUCCHINI CASSEROLE:

Slice zucchini and place into casserole layered with cooked hamburger, cooked rice, pizza sauce and cheese. Cheese on top. Bake at 350 -45 mins.

ZUCCHINI CRESCENT PIE:

4 C thinly sliced zucchini

1C chopped onion

¼ C butter

2 T parsley flakes

Salt and Pepper

½ t garlic powder, basil, oregano

2 beaten eggs

1 C shredded mozzarella

1 t dry mustard

8 oz tube refrigerator crescent rolls.

Melt butter, add zucchini, onion and cook a few minutes til limp. Add seasonings. Combine eggs and cheese in small bowl; then add to zucchini mix. Separate crescent rolls into 8 triangles. Place in ungreased 10 in pie plate and press over bottom and sides to form crust. Pour zucchini mix into crush and bake in preheated oven at 375 for 18 mins (until center set) Let stand 10 min before serving = 6 portions.
