Radish Salsa

Makes about 2 cups.
This is a refreshing, summery salsa that goes great with tortilla chips. 
It can also be used as a condiment in sandwiches or burgers.

2 cups radishes, chopped into very small pieces
½ of a cucumber (optional)
½ small red onion, minced
1 scallion or green garlic, thinly sliced
1 teaspoon garlic, minced
Fresh jalapeño or dried red pepper flakes, to taste
Lemon juice, to taste
¼ cup cilantro or parsley
Salt and pepper 

1)  Put all the ingredients in a bowl.  Mix thoroughly.

2) Taste and add more lemon, salt, or chile as needed.  Serve immediately or refrigerate for up to a day.
