Garlic Scape Pesto

3/4 cup chopped garlic scapes

1/4 cup pine nuts

1/2cup olive oil

1/4 cup lemon juice

1/2 tsp.salt

Freshly ground pepper to taste

1/4 cup Parmesan Cheese

1/4 cup Asiago Cheese

 

Place all ingredient in blender and blend until a fine consistency.  Toss with your favorite pasta or use as a sandwich spread or vegetable dip. Freezes well for a fresh summery taste in the winter.
