Roasted Vegetables

Purple Top White Globe turnips, diced

Kohlrabi, peeled and diced

Onions, diced

Summer squash/zucchini, diced

Any other vegetables, diced

Oil

Sea salt, pepper & other herbs to taste

Prepare vegetables for roasting, by dicing them into a relatively uniform size.  

  1. Prepare vegetables for roasting, by dicing them into a relatively uniform size.  
  2. Place diced vegetables in a bowl.  Coat with oil and season with salt, pepper and other herbs, such as oregano.
  3. Pour vegetables into a roasting pan and bake in a 375 degree oven until they have reached a desired softness.
