Garlic Scape Pesto


5 garlis scapes
¼ cup of finely grated paremesan cheese
¼ cup almonds (you could toast them lightly if you’d like)
About ¼ cup olive oil
Salt to taste

1. Put the scapes, most of the cheese, almonds and half of the olive oil in the bowl of a food processor or blender.
2. Whir to chop and blend all ingredients and then add the remainder of oil.
3. If you like the texture, stop. If you want it thinner then add more oil.
4. Add salt to taste.

This goes really well on freshly cooked pasta or as a spread on bread. Yum!
