2 C rice

2 T oil

1 teaspoon salt

1/4 C onion

a hot pepper

1 C cilantro

1/2 C scallion

2 garlic cloves or garlic scapes

1/2 teaspoon cumin

2 C chicken broth

As oil is heating in a large pot, coarsely chop vegetables and process in a blender with remaining ingredients. Brown rice in 2 T hot oil plus salt for about 5 minutes, stirring. Add ingredients from blender plus 2 C water. Cook as you would normally for brown or white rice.
