Sauteed Zucchini

2 medium sized zucchinis, washed and unpeeled

1/3 cup pine nuts (or slivered almonds)

1 tbsp butter

1 or 2 cloves of garlic minced

Grated cheese (optional)

 

  1. Cut zucchini in bite sized strips.
  2. Meanwhile, toast the pine nuts or almonds in the pan.
  3. Melt the butter on the same pan and cook garlic until slightly brown. 
  4. Throw in the zucchini and cook.
  5. Serve hot as a side dish, plain or sprinkled with grated cheese.
