Zucchini Bread

Recipe courtesy of The Silver Palate Cookbook

3 eggs

½ cup oil

¼ cup plain yogurt

1 ½ cup sugar

1 tsp vanilla

2 cups grated unpeeled raw zucchini

2 ½ cup flour

2 tsp baking soda

1 tsp baking powder

1 tsp salt

1 tsp cinnamon

1 tsp ground cloves

  1. Preheat oven to 350 degrees/ Butter 9x5 loaf pan.
  2. Beat eggs, oil sugar and vanilla until light and thick.
  3. Fold in grated zucchini,
  4. Sift dry together. Stir into wet mixture just until blended.
  5. Pour batter into pan. Bake in middle of oven for 1 hour 15 min or until cake tester comes out clean.

      6.   Cool slightly, remove from pan and allow to completely cool before wrapping.
