Savory Smashed Turnips

2 Cups diced Satsumas, pith and membrane removed

1 small Red Onion, finely diced

2 Cups grated Radishes

1 Cup Cucumbers, seeded and finely diced

1 Jalapeno, seeded and finely diced

2 Tablespoons fresh Satsuma Juice

1 Tablespoon fresh Lime Juice

¼ Cup coarsely chopped Mint

2 Tablespoons coarsely chopped Cilantro

¼ teaspoon Salt


Combine all of the ingredients in a medium bowl.  Set aside for 15 minutes or more to allow the flavors to meld together.  Taste and adjust seasoning as necessary.

For Sandwiches:

Cut ciabatta bread down the middle lengthwise.  Grill or toast each half.  Spread whipped goat cheese on each half.  Cut bread into approximately 1 ½  inch slices.  Top each slice with arugula leaves and Satsuma and radish salsa.
